BEEF-TOMATO SOUP-MEAL

Ingredients
(6 servings)

  • 450 g mince beef
  • 1 tbsp rapeseed oil
  • 1 onion, chopped
  • 1 carrot, diced
  • 2 cloves garlic, finely chopped
  • 2 cans (400 g) chopped tomatoes
  • 1 l round zoutarme bouillon
  • 2 the worcestershiresaus
  • ½ tsp dried thyme
  • 150g elbows-macaroni or other small pasta
  • ¼ tsp salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons grated Parmesan cheese

Preparation
(30 minutes)

  • Put a big (cast iron) skillet over medium heat.
  • Stir fry the beef until it is grainy and brown.
  • Scoop it from the pan and set aside.
  • Put the oil in the pan and fry the onion and carrot in 3 to 4 minutes until the onion have softened.
  • Add the garlic and let it fry for 30 seconds.
  • Add the tomatoes (plus juice), broth, Worcestershire sauce, beef (along with any cooking juices) and thyme with it.
  • Turn up the heat and bring the soup to a boil.
  • Stir in the macaroni through.
  • Reduce heat slightly and simmer 8 to 10 minutes to cook until the pasta is tender.
  • Season with salt and pepper.
  • Ladle into bowls and serve with a little Parmesan (optional).
